Well, you guys, I'm pooped. Wiped, tired, worn out, sleepy, exhausted. Work has been very busy the past few days. I honestly forgot how mentally and physically tired work can make you when it's non-stop for three days straight. It makes me appreciate how important a few minutes a day of downtime can be for your stamina. And for your ability to read your favorite food blogs at work. ;)
Anywho, I'm obviously droning on about my pathetic life in order to make an excuse as to why I haven't posted in three days. Truth? I was tired, but I was also LAZY. I warned you of my inherent laziness, and it reared it's ugly head the past few days. I didn't even take pictures of my food, save this beauty from Monday's breakfast:

I wanted to demonstrate how to cut the muffin to get maximum cream cheese goodness in each bite. I tried a few different ways before settling on this one as the best. I know, it's a tough job but someone has to do it. ;)
Today, however, I brought my camera to work and I was determined to use it. I had a happy breakfast:
Two slices of whole grain toast with honey and a satsuma on the side. This breakfast was FABULOUS and kept me full for hours. Also, apparently I like satsumas. I really don't like oranges very much so I've always avoided "orange" citrus fruit. Well, this week I tried my first clementine (amazing!) and my first satsuma (doubly amazing!), and discovered I'd done myself a disservice by resisting the orange varieties all these years. I will be making up for this mistake by consuming many, many orange-like fruits in the coming weeks.
I didn't have anything to pack for lunch today (my house has no leftovers, as I was so tired last night I ordered a pizza for dinner) so I planned to go out and get a salad. Well, it was a horribly ugly and rainy cold day in Nashville today so I decided to order in instead. Jimmy John's to the rescue!

I ordered a turkey sandwich with lettuce, tomato, cucumber, alfalfa sprouts, hot peppers and avocado spread (instead of mayo). Yes, I got white bread. Have you ever had the wheat bread at JJ's? It is TERRIBLE. On the side, an apple I brought from home and 20 oz. of crack.
I was very excited to get home and make dinner tonight. My company is having a healthy recipe contest over the next few weeks and each person can enter up to three recipes, and I wanted to get home and test one of my favorites out for submission. Now...you guys know I don't ever measure anything, so the goal of this test run was to get the exact measurements down.
What did I make you ask? Greek Salad Pizza!
Although this looks pretty yummy (and tasted good), I totally messed up pretty much everything in the process. The caramelized onions? Burned 'em, so they aren't even included. The pizza crust? Cooked it so long it was more like a cracker. I'm not sure recipe contests are my thing. When I cook, I sort of "feel" what I am doing rather than analyze or think about it too much. Having to cook while thinking is stressful! Ha. (But I love baking, which is all about measuring. I don't usually make up my own baking recipes, though.)
Now that I have the measurements down, I'm going to give this one more shot tomorrow. I really would like to be a "recipe contest" sort of person. If it comes out as delicious as it did the first time, it's going to be my first submission!
You have to know what I had for dessert tonight, right?
Yum, yum, yum, yum. I froze the rest of these cookies because they are dangerous. Having this ice cream/cookie combination in my house at all is dangerous, period.
Daily TV Dish
I am watching So You Think You Can Dance right now. My mind was just BLOWN by the Legion of Extraordinary Dancers. They are incredible!!! Someone needs to put that performance on YouTube immediately.
As for the regular cast, I haven't been into them as much this year as in years past. I quite like Jakob, Russell and Katherine, but overall I don't have the passion for the show this season (same with The Biggest Loser, now that I think about it). I think maybe it's just SYTYCD overload from having the new season start so soon after the summer one ended. Hell, maybe I just miss Mia Michaels.
Do any of you watch So You Think You Can Dance? Are you finding anything "off" about this season or am I just a big old curmudgeon?
